Quick, Easy, Delicious, Jam Jar Pancakes!

We like to call these jam jar pancakes, they are quick, easy and delicious. You can enjoy these pancakes in your campervan any way you like, with lemon juice, sugar, fresh fruit, chocolate or our favourite bacon and maple syrup. This recipe is gluten free but you can replace the flour with regular flour and leave out the xanthum gum if you prefer. We like to think most people wouldn’t be able to tell that they were gluten free, so why not give them a try?

Best of all you can premix the dry ingredients, and have them ready to go at a moments notice. Even once the mix is made up, it will keep well for a day in the fridge. It’s a lovely home away from home made treat, you can cook anywhere with a small stove and a frying pan.

Quick and Easy Jam Jar Pancakes!

Ingredients

    Dry ingredients:
  • 65g gluten free plain flour
  • 1 tablespoon caster sugar
  • 1/2 teaspoon gluten free baking
  • Quarter teaspoon Xantham Gum (only required for gluten free option)
  • 1/4 teaspoon of salt
    Wet ingredients (only add when ready to make your pancakes)
  • 1 large egg
  • 75ml to 125ml of Milk (start with 75ml and add more slowly until the consistency is ready for pouring)
  • Knob of butter

Instructions

  1. Before you go away, put all of the dry ingredients in an airtight container, we use jam jars but sealed bags or tupaware are fine.
  2. When ready to make pancakes simply add the remaining ingredients to the jar and shake vigorously. The mixture may be a little dry, if so add milk in small amounts, stirring (or shaking) until it is smooth with no lumps. It should drop softly from a spoon.
  3. Pre-heat your frying pan or griddle pants a high heat
  4. Add a few drops of vegetable oil.
  5. Pour a little mixture into the pan for each pancake and cook until golden on each side.
  6. Once the mixture has been prepared it will need to be refrigerated or used.

If you want to take things to the next level, you can add mashed up banana or blueberries in the mix before pouring to give a wonderful flavour.
