Reader recipe submitted by John K Bilsbury who provided the following fantastic smoked fish bujol breakfast to start your day in style.
“When I was working in Trinidad, the hotel served this as Trinny Breakfast with a piece of the local bread. The original is called Salt Fish Bujol but my simplified version uses smoked fish which is easier to buy in the UK.”
Ingredients

½ lb smoked fish, herring or mackerel

1 lime
-
2 onions, diced
-
2-3 cloves of garlic

½ green pepper, chopped
-
1 tomato, chopped and drained

½ tsp. chilli sauce

1 spring onion, finely chopped
-
½ tsp. chopped parsley
-
½ tsp. chopped coriander leaves
-
½ tsp. thyme
Instructions

Shred or flake the fish, removing any bones, and squeeze on some fresh lime juice.

Sauté chopped onion, garlic, pepper, and chopped tomato.

Add flaked fish.

Stir in chilli sauce, spring onion, parsley, coriander leaves and thyme.

Serve with (ideally warm) crusty bread.
